Milo & Olive: Bagels are Back!
By Dolores Quintana
A popular Santa Monica pizzeria is baking up bagels again!
Milo And Olive, at 2723 Wilshire Boulevard in Santa Monica, has finally brought bagels back. The pandemic has brought changes to all restaurants, but with Milo And Olive, the bagels left their bakery case due to staffing shortages and availability of ingredients.
Head Baker David Martinez has also returned and aims to bring back bread and pastry options slowly. He started as a baker when renowned Chef Thomas Keller noticed him in the kitchen and decided that he would be a good person to train in the bakery arts. Since then, Martinez has been working with prestige restaurants perfecting his breads, bagels and pastries. He also has returned to Milo And Olive with the intent of slowly bringing back the breads that customers loved during his previous tenure.
His bagels are made with a flour that has a high protein content so that they give the person enjoying the bagel that chewy texture that is prized among bagel connoisseurs.
Bread and pastry offerings vary per day, but at the moment you can find plain, everything and sesame bagels and a savory danish. He also wants to bring a cheesy bread to the case in addition to the usual country loaf and focus on the quality of what his team produces.
