This delicious recipe was the favorite of one of my patients; it came from her Sardinian grandmother who lived to the ripe old age of 102. Its ingredients benefit the heart, enhance immunity and aid digestion; mushrooms are high in fiber with virtually no fat and are very helpful in lowering cholesterol and cleansing the intestinal tract while the magnesium and potassium in chard or spinach give your heart a boost. Serves two. Enjoy!
Ingredients
2 teaspoons avocado oil
1 clove garlic, diced
1 small bunch spinach, finely chopped
8 fresh porcini or brown cremini mushrooms, chopped
6 large egg whites
Sea salt and freshly ground black pepper
1/2 red bell pepper, finely chopped for garnish
Directions
1. Heat the oil in a large nonstick skillet over medium heat. Add the garlic and cook, stirring until fragrant, about 1 minute. Add the chard (or spinach) and mushrooms and cook, stirring, until mushrooms are softened and chard is just limp, 3 to 4 minutes. Drain any excess liquid from the pan.
2. Reduce the heat to medium-low and pour in the egg whites. Cook, stirring gently, until just set, 1 to 2 minutes. Season with salt and pepper to taste and remove from the heat. Garnish with chopped red pepper and serve immediately.
