Dishes Include Achari Paneer Glazed With Buttercream Emulsion, Avocado Chaat With Burrata and Indian Spices, and Pulled Butter Chicken Kulcha
Fitoor, a contemporary Indian grill and lounge, has opened its doors on Ocean Avenue in Santa Monica, marking AVB Hospitality’s first Southern California venture.
Fitoor, which translates to “passion” in Hindi, blends traditional Indian flavors with modern techniques, featuring fire-based cooking and a seafood-forward menu. Led by Head Chef Surya Kumar and Executive Chef Vaibhav Sawant, the menu is designed to surprise diners with inventive twists. Dishes include Achari Paneer glazed with buttercream emulsion, Avocado Chaat with burrata and Indian spices, and Pulled Butter Chicken Kulcha. The seafood offerings reflect the coastal setting, with highlights like Maryland Soft Shell Crab and Asado Branzino flavored with mustard paste and Indian herbs.
The restaurant’s beverage program offers cocktails inspired by the five natural elements—Water, Fire, Earth, Air, and Space. Notable options include the Batanga, combining tequila and coffee for a water-inspired flavor, and the Pasha, featuring bourbon and Jaan Paan Liqueur, evoking the essence of fire.
Designed by Manu Studios, the interior embraces an earthy, nature-inspired aesthetic with walnut woods, emerald hues, and shou sugi ban finishes. A private dining room, casual lounge, and an inviting bar area provide versatile spaces for gatherings.
