Heirloom corn pitas take center stage this Monday as Camello Pita Poblano hosts a limited lunchtime pop-up atPetitgrain Boulangerie.
The pop-up event, scheduled for Monday, May 18, from 11 a.m. to 2 p.m., features a menu of fusion-style sandwiches served on pitas crafted from non-GMO corn sourced directly from Oaxaca, Tlaxcala, and Veracruz. Organizers emphasized that the pitas contain no food dyes or preservatives, with the vibrant colors occurring naturally from the specific corn varieties used.
The specialty menu for the Wilshire Boulevard event includes:
- Lamb Neck Shawarma: Featuring hoja santa amazake, salsa cruda, and black garlic molasses.
- Labneh Al Pastor Chicken: Accompanied by tahini mousse, salsa cruda, and a hoja santa mast o khiar.
- Huitlacoche & Squash: A vegetarian option utilizing mole muhammara, feta, and hoja santa mast o khiar.
Camello’s culinary approach focuses on supporting independent grain farmers across California and Mexico, blending traditional Mexican ingredients with Middle Eastern preparation techniques. Featured farms are Weiser Family Farms, Tehachapi Grain Project, Ullises Hernandez via Somos Maiz, and Huitlacoche Bodega. –
