A popular gluten-free pasta restaurant will be opening its second location in Santa Monica next year.
The gluten-free pasta restaurant Impasta will be opening a second space in Santa Monica at 413 Santa Monica Boulevard according to What Now Los Angeles.
The cleverly named concept started out as a delivery service during the pandemic. They did so well that they were able to open a brick-and-mortar location in Beverly Hills in Sept. of 2021. Their motto is “crave pasta, not carbs” and they feature vegetable pasta like spaghetti or tagliatelle made out of squash, zucchini noodles or zoodles or cauliflower gnocchi. A number of the pasta dishes have vegan options like Impossible sausage and vegan cheese.
There are even noodles made out of kelp and dishes with hearts of palm, as well as salads and Impizza made with a cauliflower-based crust.
The pasta dishes do utilize traditional Italian sauces like Pomodoro, Puttanesca or Pesto. Owner Harrison Litvack estimates that the Santa Monica edition will open in late 2022.
What Now Los Angeles quotes Litvack who said, “We are excited because it’s a whole other market for us. A lot of our target demographic lives on the west side. We’re hoping this second location will make our product more accessible to Los Angeles.”
